Berry Salad
The Best Gluten Free, Yeast Free & Corn Free Flat Bread
Piadina a flat bread of the Italian Rimini and the Marche region are usually sold immediately after preparation in specialized kiosks (called piadinerie) filled with a variety of cheeses, cold cuts and vegetables, but also with sweet fillings such as jam or Nutella. I have tried a number and for all those frees this is my favorite so far. However eat it the same day as it goes hard and dry by the morrow. Modified from a recipe on beyondthewheat.com to be corn allergy free!

Farmer Bread (Burebrot)
From A Taste of Switzerland by Sue Style. I've adapted this to work for me; mostly by adding a bit more yeast, a bit less salt, and using bread flour instead of plain white flour. This is a dense, wheaty loaf, great for toasting and topping with some good rustic cheese. Having such a dense structure, it would also be a great dipper for a pot of cheese fondue!

Roasted Pepper Halves With Bread Crumb Topping
This is a fantastic recipe. It's one that my husband really loves. Most men seem to love peppers, don't they? It originally came from the cookbook "Lidia's Italian-American Kitchen" by Lidia Bastianich. I've tweaked it a little for our tastes and made some changes to make it a little bit simpler to do. You can serve them hot or at room temp. for an appetizer or a wonderful, tasty side dish. I use them both ways.
